Serious foodies rate lucques olives as "the best of the best". Bright green and slightly crescent shaped, they are unlike any other olive you are likely to taste. Their firm, meaty flesh is crunchy and just a little sweet and it has an underlying flavour of almonds and butter. Head to any good market in the Hérault district (you'll find that there are plenty of them) and you'll see great barrels of lucques olives for sale, for these are specialities of the region.
